I made some ‘killer’ chili recently and I thought that I’d share the receipe with all you hot guys!

Marie’s Kick-Ass Chili

  • 12oz Mild Italian Sausage
  • 1lb Hamburger(ground chuck)
  • 2lb Chuck Roast(1/4-1/2″ cubes)
  • 3 Cans Tomato Sauce
  • 3 Cans Diced Tomatos(1 regular, 1 with Garlic & Olive Oil, & 1 with Chilis Verdes)
  • 3 Cans Busch Beans(1 Dark Red Kidneys, 1 Seasoned Black Beans, & 1 Chili Beans in Hot Sauce)
  • 1 Sweet Red Bell Pepper
  • 2 Medium Yellow Onions
  • 2 Hot Green Chili Peppers
  • 1 Habenero Pepper
  • Flour, Hot Chili Powder, Cumin, Cinnamon & Brown Sugar
  • Bacardi & Coke or any Alcoholic drink of your choice!

Step 1: Pour yourself a nice drink .. LOL

Step 2: Cut up your vegetables - diced the sweet pepper and the onions - finely chop up the hot peppers & habenero (Be careful with those hot peppers! They’ll sting any cuts and don’t wipe at your eyes unless you’ve washed your hands twice, at least. OR use a pampered chef chopper thingie that’s what I do so then I don’t get any hot stuff on my fingers!).

Step 3: Cube up your Chuck Roast.

Step 4: Mix up another drink, this is thirsty work!

Step 5: Brown your sausage & hamburger with 1/2 of the hot peppers & all the oninons.

Step 6: Dredge your cubed chuck roast in a baggie with some flour then dump the chunks in a large strainer or colander to shake off excess flour.

Step 7: Scoop the sausage, hamburger, and onions out of the skillet (stove top or electric, I use a large electric one) leaving the ‘grease’ behind to brown the cubed chuck roast.

Step 8: Fix yourself another drink, lord knows I need one!

Step 9: Brown (should only take ya about 5 min) your cubed chuck roast pieces on medium heat (325 if in the electric skillet) and you might need to add a little more ‘grease’ in the form of olive oil, but maybe only a coupla teaspoons will do ya!
Step 10: Add everything together into your big crockpot - The sausage, hamburger, onions, browned chuck roast pieces, the cans of tomatoes, the cans of tomato sauce, the cans of beans(drain the kidney & black beans, but not the chili beans in hot sauce), the rest of the finely chopped hot peppers, & the diced red sweet bell pepper

Step 11: Season with the hot chili powder, cumin, cinnamon, & brown sugar - my suggested quantities .. 3tsp Chili, 1/2 tsp Cumin, 1/2 tsp Cinnamon, and a BIG pinch of Brown Sugar … Stir it all together good!
Then you let the crockpot do the rest, sit back and pour yourself another nice drink and gimme a call baby! Cook in the crockpot on low for about 8-10 hours and, wha la .. you have a big crockpot full of “killer chili”!

Mine numbs my lips & tongue and burns it’s way on down … Best to eat with a couple of slices of bread handy!! Lemme know whatcha think!
